Delish lentil & quinoa soup

Hello dear readers,

Today I want to share with you my delicious quinoa and lentil soup recipe.
As some of you may already be aware of I am trying to have healthy eating habits and also to be plant based. This recipe is 100% vegan and packed with protein, what else can a girl ask for?!

Here’s what you will need:
-Lentils
-Quinoa
-Sweet potatoes
-Carrots
-Tomatoes
-Kale
-Onions and garlic
-Fresh coriander
-Salt, pepper, cumin, curry (pretty much any spices you like)
As you noticed I don’t use any measurements, I usually do freestyle cooking.

To begin with you should let the lentils soak in water overnight. It facilitates the cooking process.
On the next day cook the lentils for about 30 minutes on medium heat.
In the meantime I cut all the other ingredients and put everything in a pot with some olive oil except the coriander that will be added at the end. Just make sure the quinoa doesn’t burn.
Once the lentils are 95% cooked I pour one pot into the other and let it simmer for another 20 to 30 minutes or until all ingredients are cooked. At the end just add the coriander for the extra fresh flavor.

I usually serve it toped with half an avocado. I totally love avocados and eat them with anything.
This is a very simple recipe, you can use any type of lentils that you like, also I like to use sweet potatoes with it but I tried it with butternut squash the other day as it was what I had at home. It’s super nice also.
